Rhubarb Sauce

This delightful sauce is yummy on ice cream, yogurt, or waffles!

Serves: 4 cups
Ingredients
  • 3 pounds chopped rhubarb
  • 1 cup water
  • 1 cup fresh orange juice
  • zest of one small orange
  • 1-2 cups of evaporated sugar cane (sweeten to your preference)
Instructions
  1. Combine the water, orange juice, and sugar in a saucepan and heat until all sugar is dissolved and syrup is just beginning to boil.
  2. Add the chopped rhubarb and cook for 4-6 minutes until the rhubarb is just soft. Put a lid on the saucepan, remove it from the heat, and let it sit until the sauce has cooled.
  3. Serve over ice cream, yogurt, waffles, or your favorite cake.
